Looking out for a simple and easy lunchbox recipe for your kid?? Have leftover boiled basmati rice in your refrigerator?? Then try this out!!! Your kids will love it...!! You will need a frying pan and a saucepan. I have taken a 250 ml cup for the measurement.

1 Step

In a saucepan, add 1/2 cup green peas, 1 cup water and a pinch of salt. Let it cook on a medium flame for 5 mins. Strain out water and keep it aside.

2 Step

To a frying pan, add 1 tbsp oil and keep on a medium flame. Scramble two eggs adding a pinch of salt. Once done, add boiled green peas and fry for a minute. To this, add two cups of day-old basmati rice. Turn the flame to high after adding 1/4 tsp black pepper powder and required salt. Fry for two to three mins and add 2 tbsp coriander leaves. Mix well and remove from fire.
